COPOAZÚ Tambopata origin

The copoazú (Theobroma grandiflorum) is a perennial plant like cocoa, it grows in harmony with the environment, and is associated with agroforestry systems, preserving our native forest and animal species. From the copoazú fruit you can take advantage of the pulp, which is used to make cold drinks, jams, nectar, cakes, etc. and the beans, like cocoa, are used to make cocoa paste and chocolates bitter, the characteristic flavor of copoazú beans is a slight acid, offering a combination of sweet and sour sensations taste.

 

According to research, they have discovered the presence of new antioxidants that are exclusive to this fruit and called “theograndin I” and “theograndin II”, which are not found in any other plant on the planet. These antioxidants are relatively little known, but the recent tests that have been carried out shown that “theograndin I” helps in the development of healthy cells and “theograndin II” is a very powerful antioxidant. In addition, copoazú has another nine antioxidants, it means, it is not only a delicious fruit, but also very good for our health.

Copoazu pulp

Copoazú pulp ideal for making cold drinks, jams, nectar, fermented drinks, pastries.

The transport of the pulp has to be complying the cold chain. The main purpose of chilling or freezing pulp, is to prolong shelf life and to maintain the fresh appearance of the pulp.

Cocoa powder is essentially used as flavor in biscuits, ice cream, dairy drinks and cakes. Apart its use as flavor it is also used in the manufacture of coatings for confectioners or frozen desserts. Cocoa powder is also consumed by the beverage industry for example for the preparation of chocolate milk
